AVOCADO TOAST WITH MUNG BEANS

Ak máte radi avokádo, určite ste už skúšali rôzne nátierky od guacamole až po vidličkou roztlačené a ochutené avokádo. V tomto recepte som zvolila kombináciu jednoduchej avokádovej nátierky, drobných mungo fazuliek a bezlepkového semienkového chleba. Chute sa krásne dopĺňajú, sýtosť mungo fazuliek a „krémovosť“ avokáda vyváži jemná červená cibuľa. Jediné, na čo sa treba pripraviť, je naklíčenie mungo fazuliek aspoň dva dni vopred. Ak ste sa s klíčením fazuliek ešte nestretli, pod receptom pridávam postup, ako ich naklíčiť. 

Ingrediencie

1 avocado

1 clove garlic

30 g mung beans

1 red onin

lemon juice

himalayan salt

pumpkin seeds

chpped fresh parselay

toast / bread of your choice

Postup

  1. Sprout mung beans in advance.

  2. Place avocado in a bowl and crush with a fork. Add pressed garlic, salt and lemon juice.  

  3. Spread avocado on each toast, top with mung beans, pumpking seeds and chopped parsley.

  4. Cut onion into thin slices and top each toast to decorate. 

How to sprout mung beans

Rinse the mung beans until water runs clear. Place beans into a small bowl and pour cold water into it. Soak overnight. The next day, drain away water, rinse beans again and drain cold water. Repeat this step few times a day until you see beans sprouted. It usually takes 2 days, but you can sprout it longer to the lenght you like. I sprout beans at room temperature.
